HOW TO COOK MULLIGATAWNY SOUP RECEIPE

Mulligatawny Soup Recipe* 


Mulligatawny though a soup can be served as a main course. This is a meal itself. 


Ingredients required:

1 Medium size chicken

2  Onion, thinly sliced

1/4 cup chopped  carrot 

1/4 cup chopped celery

1 cup chopped tomatoes  

1 big sweet green chili, chopped 

1 apple, chopped 

1/2 teaspoon ginger paste

1 teaspoon turmeric paste 

1 tablespoon coriander paste 

1 teaspoon cumin paste

1 teaspoon chili powder 

1 tablespoon cracked black pepper 

2 cloves 

Few curry leaves 

1/3 cup flour

4 tablespoons ghee (alternatively white oil along with butter can be used) 

5 cups water

Salt to taste 


How to prepare Mulligatawny Soup:

Keep aside the chicken leg and breast from the chicken. 

Boil the rest of the chicken in 5 cups of water. After boiling, strain them. Keep aside the chicken stock in a bowl. 

Now cut the chicken legs and breast into small pieces.

Melt ghee (or white oil with butter) in a pan and saute in low flame the onion slices, the chopped carrot, celery, sweet green chili and apple until tender.

Start frying the chicken legs and breast pieces adding the flour. 

Then add the ginger, coriander, cumin, turmeric paste and chili powder. Also add the chopped tomatoes, cloves and the curry leaves. Stir for 2 seconds. Now add the 5 cup chicken stock that was kept aside in the beginning. 

Simmer these covering for 1 hour in low flame. 

Now strain these with a big strainer and take out the chicken pieces. Mashed the vegetables. Add the mashed vegetables in the chicken soup along with the chicken pieces. Add salt as needed.

You can even add the chicken separating from the bones which was used to make the chicken stock. 

Now Mulligatawny Soup is ready. Serve hot.
