Noodles - 400 grams
Chicken - breast piece (boneless) - from 1 small chicken
Egg - 4 nos.
Prawns - 2 handfuls
Beans (tender ones) - a handful
Cabbage - a small size
Carrots - 2 medium sized
Baby corn - 4 nos. (optional)
Onion - 2 Medium – Sliced
Garlic - 6 cloves
Ginger - 1 inch (julienne)
Green chilies - 6 (slit)
Spring onion - a small bunch chopped
Pepper powder - according to your taste
Soya sauce - : 2 tablespoons or as per your taste
Oil - 3 to 4 tablespoons
Salt - according to your taste
HOW TO MAKE MIXED CHOWMEIN
Make a few deep slits on the chicken breast, and marinate this with the crushed garlic, olive oil, black pepper powder, salt and soya sauce for 30 minutes.
Cook until the chicken becomes tender (Keep the leftover juices).
When cooked and cooled, shred the chicken into long thin pieces.
You can add any other meat also. The cooking process is same as the chicken preparation mentioned above.
Clean the prawns, rinse them in the cold water.
Then start de-shelling and deveining the prawns. You will need to remove the head, the tail, and the legs before cooking the prawns.
In the cleaned, de-shelled prawns, mix a little salt and turmeric powder. Then fry lightly in the oil and set aside.
Take the eggs, add little salt and pepper and beat the mix. In the frying pan spread little oil and heat.
Pour the egg mix and scramble the egg mix. Set aside.
Clean in cold water and strain all the vegetables as mentioned in the ingredients.
Julienne the vegetables separately into long thin strips.
Slice the onion, ginger and green chili. Crush the garlic cloves.
Heat a frying pan, add a little oil, and stir fry the vegetables mentioned in the ingredients along with the shredded chickens.
Meanwhile take a large pan, boil water, and add salt and little oil to it. Add the packed noodles and cook them as per their detailed instructions found on the package.
Please be careful not to overcook the noodles.
When the noodles are cooked, strain them. While keeping this on the strainer, wash them by the tap water. Now keep this on big plate.
Add a few drops of oil at this point and give the noodles a toss, so they won’t be sticky.
Heat a large pan, add oil. Add the crushed garlic, followed by ginger, green chili and onion. Sauté them well until they are soft and cooked.
Add the leftover juices from cooking the chickens. Now add all the cooked vegetables, egg, chickens, prawns and meat. Give them a thorough mix.
Now add the cooked noodle, soya sauce and spring onions. Add salt as needed.
Give a thorough mix so that everything is uniformly mixed.
Check the seasoning and add soya sauce as required
Serve hot with tomato sauce.
Do not overcook the noodles.
Do not overcook the vegetables, just stir fry and leave them fresh and crisp.
Soya sauce contains salt, so adjust your seasoning accordingly.
