This year, mangoes are available at a very cheaper rates. I even purchased mangoes @Rs. 20 per kg. The mango seller informed me that these mangoes were from Bihar - very big size mango and very sweet also. Even I purchased langra mangoes @Rs. 50 per kg (2 weeks back). I am a mango lover. If you love mangoes, buy these nutritious fruits to prepare as many as recipes with mangoes.
I am today presenting a very easy mango preparations - HOMEMADE RIPE MANGO JAM. I have not used any preservative - no pectin, critic acid and artificial colour. I have only added lemon juice.

Ripe Mangoes - ½ kilogram
Cane Sugar - 200 Grams or 1 cup
Lemon Juice - ½ teaspoon
Salt - 1 pinch

How to make Homemade Ripe Mango Jam (Recipe)
Take ripe firm mangoes (not overripe). Do not peel the mangoes. Cut vertically on both sides of the seed, using a knife.
Now use a spoon to scoop out the flesh from each slice in a bowl.
With the back of a fork mash the mango flesh or blend the mango flesh into a blender to blend to a smooth puree, without adding any water.
Heat sugar with ½ cup water in a heavy-bottomed pan. When the sugar dissolves fully, add the mango puree. Heat this and mix well with a wooden spatula. Add 1 pinch salt.

Cut lemon into half, remove the seeds and squeeze out the lemon juice in the jam preparation.
Once the mixture starts boiling, reduce the heat to medium, and stir continuously until the mixture begins to leave the edge of the pan.
Keep checking as you stir, drop the mixture from the spatula, it will drop easily, which means it needs to be cooked further.
Once all the moisture evaporates, the jam will begin to leave the sides of the pan.
If the jam does not drop from the spatula, this is done. Remove this from the heat.
Transfer the prepared jam to a sterilized airtight container/jar and store in a cool and dry place.
Serve Mango Jam spreading on a bread for breakfast.

If you want to make jam with the unripe mangoes, then after washing the unripe mangoes, peel the mangoes and cut into small pieces. Then boil the mangoes, mash with the spatula. Add cane sugar, as needed.
Also add slight salt and lemon juice. Cook until you get the jam consistency. When cooled, store in a sterilized jar.
Note :
Fill the jam in the container/jar in the lukewarm stage. Keep the lid of the jar open and let the jam cool down completely. Once cooled, close the lid and keep this in the refrigerator.
Do not add sweet in less quantity even if the mangoes are sweet. If you add less sugar to mango jam, the shelf life of Mangoes Jam will decrease.
While eating Mango Jam, always use dry spoon, not wet spoon.
