Paneer Butter Masala, Paneer Masala

Paneer Masala Recipe Dhaba Style*

 

INGREDIENTS 

For dhaba masala :

2 teaspoon coriander seeds

1 teaspoon cumin seeds

¼ teaspoon pepper

3 cloves

2 pods cardamom

½ inch cinnamon

½ teaspoon fennel 


For Paneer marination :

250 grams paneer

½ teaspoon chilli powder

¼ teaspoon turmeric

¼ teaspoon garam masala

1 teaspoon ginger  paste and ¼ teaspoon garlic paste 

1 tablespoon ghee / clarified butter 


For Curry :

2 tablespoons ghee / clarified butter

2 tablespoons oil

1 bay leaf

2 pods cardamom

1 inch cinnamon

2 cloves

½ teaspoon cumin seeds

1 onion, finely paste or chopped 

1 teaspoon ginger  paste and ¼ teaspoon garlic paste 

¼ teaspoon turmeric

1 teaspoon chilli powder

¾ teaspoon salt

Cashews 16 pieces - soaked in water for 15 minutes. Then make a smooth paste.

2 tomato, finely chopped or slightly boiled, then after peeling the skins, mash the tomatoes 

½ cup curd, whisked

1 tablespoon cream (optional)

½ cup water

1 teaspoon kasuri methi, crushed

¼ teaspoon garam masala

1 tablespoon coriander leaves, finely chopped

Slight Sugar (optional)


INSTRUCTIONS 

Paneer Matination Process :

Firstly, in a large bowl cut the Paneer into medium equal pieces 

Now add ½ teaspoon chilli powder, ¼ teaspoon turmeric, ¼ teaspoon garam masala, 1 teaspoon ginger paste and garlic paste, ¼ teaspoon salt.

Mix well gently and marinate for minimum 30 minutes.

Now heat 1 tablespoon ghee and fry marinated paneer for a minute making sure all the sides are cooked well.  Keep aside. You can use Refined Oil instead of ghee.  

Preparation of dhaba style spice powder :

Firstly, in a heavy-bottomed pan take 2 teaspoons coriander seeds, 1 teaspoon cumin seeds, ¼ teaspoon pepper, 3 cloves, 2 pods cardamom, ½ inch cinnamon and ½ teaspoon fennel.

Dry roast on low flame until the spices turn aromatic.

Cool completely, and blend to a fine powder. Keep aside.

HOW TO MAKE PANEER MASALA RECIPE DHABA STYLE 

Firstly, in a large kadai heat 2 tablespoons ghee and 2 tablespoons oil.

Add 1 bay leaf, 2 pods cardamom, 1 inch cinnamon, 2 cloves and 1 teaspoon cumin.

Saute until the spices turn aromatic.

Now add onion, a ginger and garlic paste. Stir for a while.

Further keeping the flame on low, add the prepared spice powder, ¼ teaspoon turmeric, 1 teaspoon or less chilli powder and ¾ teaspoon salt.

Saute on low flame until the spices turn aromatic. Add cashew paste.

Now add the tomato pieces. Alternatively you can add the mashed boiled tomatoes. Saute until tomatoes turn soft and mushy.

Further, keeping the flame on low add ½ cup curd.

Stir continuously until the curd is combined well and oil separates out from the mixture.

Add ½ cup water or as required adjusting the consistency.

You can add slight sugar (optional)

Now add the fried paneer and mix well gently.

Cover and simmer for 5 minutes or until the flavours are absorbed well.

Add 1 teaspoon kasuri methi, ¼ teaspoon garam masala and 2 tablespoons coriander.  Mix well.

Lastly you can add cream if you wish to make the Paneer Masala Dhaba Style dish look rich in texure and make more tasty.

Finally, Paneer Masala Recipe Dhaba Style is ready to serve.
