HOW TO MAKE BHATURA

Bhatura is a North Indian dish. But apart from north, this food has a growing popularity in all over India. 

Mainly, Bhatura is served along with the Cheakpeas or Chole or Kabuli Chana Masala.

With refined flour, curd, baking powder or baking soda, salt and water Bhature are kneaded until you get a soft and smooth dough. Then the dough is divided into small small portions. Shape these dough portions like small balls. Then start rolling the dough balls one by one just like big Puri. Next step is deep frying each Bhatura in the oil.

I must tell you the incident that inspired me to prepare Bhature recently. A month back in the afternoon, I was passing through the footpath of Dalhousie area in Kolkata, which is called "office para" or Office area of Kolkata, near The LaLiT Great Eastern Hotel. 

I noticed lots of street food stalls were there. Most of the sellers were selling Chole Bhature, Samosa, Kachuri, Puri, Roti, Alu Sabji, Jilebi etc. I was very hungry, I just had the breakfast at my home in the morning. Still I did not buy any food from them. Nowadays, I restrict myself from buying food from outside. Though I felt tempted to buy Chole Bhature dish, but I resisted myself. But that day, I promised that I must prepare Bhature and Cheakpeas or Chole or Kabuli Chana Recipe at home shortly.

I prepared this Bhature and also Cheakpeas or Chole or Kabuli Chana Masala Recipe few days ago. I ate my homemade tasty Bhature and Cheakpeas curry to my heart's content (I ate only 2 Bhature and one small bowl Chole Masala).

RECIPE INGREDIENTS 

Refined Flour or Maida - 2 cups (250 grams)

Semolina* : 4 tablespoon 

Sugar - 1 teaspoon 

Baking soda - 1/4 teaspoon 

Salt - 1 teaspoon 

Oil - 4 tablespoon (required dough making time)

Curd or Dahi - 1/4 cup or 4 tablespoon 

Refined Oil or ghee - enough to deep fry the bhature

Water - as required for kneading

* Semolina is added for making the Bhature crispy. 


How to make Bhatura 

In a large plate or bowl, add the Refined flour or Maida and then sugar, baking soda, salt, oil and curd.

Mix all the ingredients well. Start adding water little by little to knead well to make a soft and smooth bhature dough. 

After you finish making the dough, smear oil on the dough. Keep aside the dough in a bowl covering with a damp cloth for 4 hours. 

After 4 hours, it is ready to roll the Bhature. Divide the dough into medium size portions or smaller portions as per your choice.

Take the medium or small dough portion. Smear a drop of oil and roll and flatten the dough portion, in between your palm. Follow the same steps with rest of the dough portions.

Place the flatten dough portion on the rolling board. Smear few drops of oil again and start rolling the dough using a rolling pin. If you have any difficulty on rolling the Bhature dough portions with oil, then instead of oil, roll them after sprinkling some refined flour. Then you will be able to roll the Bhature dough balls comfortably. Finish rolling all the dough balls.

Ready to fry Bhature* 

Heat oil or ghee and deep fry the bhatura. Do not over heat oil. Use medium to medium-high flame while frying. When one side is golden, gently flip and fry the second side.

Follow the same procedure for the remaining bhature. 

Now serve the hot puffy golden crispy Bhature on the serving plate along with Cheakpeas or Chole or Kabuli Chana masala and Tamarind Sauce.

Bhature can also be served with Roti, Naan, Paratha, Puri etc. 

Serving Bhature without Cheakpeas or Chole or Kabuli Chana Masala is unthinkable.

The above Bhature Recipe is without Yeast. With yeast Bhatura recipe is slightly different.
