From the name Shahi Tukda, it can be assumed that this is a Mughlai cuisine. Shahi or badshahi means royal and tukda means piece. So this recipe literally means royal piece of dessert.
Here one point is that even in Mughal Era, bread (bread not Chapati) was used to make this Shahi Tukda dessert! I heard that bread was introduced to India by a Portuguese baker. How come the bread was used in Mughal Era to prepare this dessert?
I saw this Badshahi Tukda Recipe in a Bengali Recipe book long ago when I was a school going girl. But I was not interested to make this recipe.
I thought this cuisine is not good enough to prepare. How come a dish can be tasty where the main ingredients are bread and milk? In my school going days, I was served a glass of milk with two slices of bread as breakfast almost every day. I got bored eating the same breakfast everyday.
So initially, I was reluctant to prepare this dessert.
But suddenly last month, I decided to prepare this Shahi Tukda dessert.
After I tasted my Shahi Tukda dish, I could understand why this cuisine is called Shahi or Badshahi. Wow, what a dish! I ate to my heart’s content my Shahi Tukda dish.
The main ingredients of this rich popular dessert recipe is bread, ghee, milk, sugar and nuts. This is a very easy recipe and can be prepared quickly.

White Bread : 4 slices
Ghee : As required for frying Bread slices
Sugar : 1½ tablespoon for preparing the milk and ½ cup for sugar syrup
Water : As required for making sugar syrup
Cardamom : 3 pods (crushed)
Milk : 1 litre
Saffron : Few Strands
Rose water (optional) : 1/3 teaspoon
Almonds : 6 – 7
Pistachio : 8 – 10
Cashew nuts : 6 – 7
HOW TO MAKE SHAHI TUKDA
Place the bread slices on a tray. Cut the sides of the bread slices and cut the slices diagonally.
In a frying pan, heat 1 tablespoon ghee. Fry all the nuts in ghee, chop them and keep aside.
Now again, heat the ghee and when it is hot, deep fry the bread slices till golden brown. You can shallow fry the bread slices or deep fry the bread slices as per your choice. I shallow fried the bread slices. The bread slices absorb lots of oil.
You can also first toast the bread slices without ghee. Dry roast the bread slices until these turn brown and then shallow fry the bread slices. Thus you can fry the bread slices with less oil.
Keep aside the ghee fried bread slices.

In a pan, add water and sugar. Boil on medium heat until the sugar syrup becomes slightly sticky. Remove the pan from the gas oven and keep aside.
Heat milk in a heavy bottom pan.
When the milk starts boiling, add the saffron strands and rose water (optional) and reduce the heat and let the milk simmer. Add Cardamom powder. Now add sugar. Let the milk be thicker a little more until this reduces to half.
Add few chopped nuts and keep aside rest for garnishing. Keep stirring in between.
In the meantime, soak the ghee fried bread slices in sugar syrup for few seconds. See to it that these are well coated on both the sides of the bread slices with the sugar syrup.
Keep them on a serving plate and pour the thickened milk over the bread slices.
Garnish with the chopped almonds, cashews and pistachios.
Serve immediately.
Alternatively, you can drop the ghee fried sugar syrup coated bread slices into the thickened milk. Soak the bread slices for a while.
Garnish with the chopped almonds, cashews and pistachios.
In this process, the bread slices will be soften and will not remain crispy.
Keep this on refrigerator.
Serve chilled the tasty Shahi Tukda dessert.
