Dudh Gokul Pithe Recipe* |
Dudh Gokul Pithe is a sweet fried dumplings cooked in milk gravy. This is a traditional Bengali Pithe generally prepared during the festival of Makar Sankranti and Poush Sankranti.
Grated Coconut - 1/2 cup
Date Palm Jaggery (Khejur Gur) or sugar - 1/2 cup
Khoya Kheer - 1/2 cup
All Purpose Flour or Maida - 1/2 cup
Semolina or Suji - 2
Rice flour - 2 tablespoons
Ghee or clarified butter - 1 teaspoon
Water or Milk - 1/2 cup
Oil for frying
Full cream milk - 1 litre
Date Palm Jaggery or Sugar - 1/2 cup or as per your taste
Cardamom powder - 1/2 teaspoon
Salt - 1 pinch
HOW TO MAKE DUDH GOKUL PITHE RECIPE:

In a kadai or pan, add the grated coconut, date palm jaggery or any other jaggery and grated khoya. Cook on medium flame. Stir continuously. When the coconut mixture becomes sticky, switch off the flame.
Start making small balls from the coconut mixture and flatten them with your palms when the mixture becomes slightly cool. The mixture should not be cool.
Before making coconut balls, grease your palm with oil or ghee.

In a bowl, add all purpose flour or maida, semolina or suji, rice flour, ghee or clarified butter. Mix well. Add milk or water. Mix well to make a thick but flowing smooth batter without any lump. Keep aside.

Heat oil in a kadai or frying pan.
Dip each coconut filling in the batter.
Coat the batter uniformly and deep fry them on medium flame. Do not over fry. Keep aside.
Boil the milk to make this slightly thick.
Add the fried pithes or fried dumplings in the milk. Let them boil in the milk. After one side is cooked, turn them to cook the other side the in the milk gravy. If the milk starts thickening, add date palm jaggery or sugar. Add 1 pinch salt. Add cardamom powder. Mix stirring carefully so that the pithes do not break.
Remove from the flame. Let them cool.
Refrigerate the Dudh Gokul Pithes. Serve chill.
